Shiraz
Late spring rains allowed the vines to prosper following a relatively dry winter. Average yields allowing good varietal flavours to develop throughout the vineyards.
Deep garnet appearance. Fragrant aromas of red and blue fruits, choc and spice. The generous palate has raspberry and blueberry fruits, spice with a supple tannin finish.
A multi regional medium bodied dry red to savour with beef wellington, a gourmet pizza or slow cooked pork.
Harvested when ideal tannin and fruit ripeness achieved. Gentle destemming into static fermentation vats followed by 7-8 day fermentation at 25ºC to extract maximum flavour and colour. The wine was then put through maturation for 3 months with a combination of American and French oak.
