Kobe beef (b80, Kbe bfu) is Wagyu beef from the Tajima strain of Japanese Black cattle, raised in Japan's Hygo Prefecture around Kobe city, according to rules set out by the Kobe Beef Marketing and Distribution Promotion Association.[1] The meat is a delicacy, valued for its flavour, tenderness and fatty, well-marbled texture. Kobe beef can be prepared as steak, sukiyaki, shabu-shabu, sashimi, and teppanyaki. Within Japan, Kobe is one of the three Sandai Wagy, the "three big beefs", along with Matsusaka beef and Lmi beef or Yonezawa beef.
Kobe, located on Osaka Bay in western Japan, is a port city best known for its eponymous local brand of beef. Japanese beef, or wagyu, includes several breeds of cattle that have been domesticated from wild oxen, with the various regions of Japan specializing in their own local wagyu brands. Kobe beef, in particular, is world famous for its intense marbling. Rich and sweet without being greasy, the meat possesses a unique tenderness and melting texture that is second to none.
