Fact: Among the truffle species, it is the most commonly use in dishes. It is a less mature sister to the Burgundy Variety.

Flavour: Gentle and mild of earthy

Availability: May to August

Shape and Size: Round and irregular shape

Suitable For: Sauce making, appetizers, main courses, meat, fish, eggs, pizza dough, focaccia, piadine, dried pasta, ravioli, ricotta, tortellini, and sweet cheese.

Rarity during Harvest Season: Very common
