Instructions:

- Take a spring roll wrapper and place it on a clean surface or cutting board. Place a spoonful of the vegetable filling in the center of the wrapper, leaving some space at the edges.
- Fold the bottom edge of the wrapper over the filling and roll it up tightly. Fold in the sides of the wrapper and continue rolling until you reach the top edge. Dab some water on the top edge to seal the spring roll.
- Repeat the process with the remaining wrappers and filling until all the spring rolls are assembled.
- In a deep frying pan or pot, heat oil for deep-frying. Once the oil is hot, carefully place the spring rolls into the oil, a few at a time, and fry until they turn golden brown and crispy. Use a slotted spoon or tongs to remove the spring rolls from the oil and drain them on a paper towel-lined plate.
- Serve the vegetarian spring rolls hot with your choice of dipping sauce.
