Alkaline water is an ingredient used in making noodles, mooncake and soaking dried squid. It gives a certain texture and flavour to the food. It is also famous for making cincau. It has other domestic usage such as, to serve as a water softener. It is too a food additive used as an acidity regulator, anti-corrosion agent and as a baking agent as well as stabilizer.
