VINIFICATION – The grapes are partially destemmed and crushed directly into an ever-full, 3 days of cold maceration: 12 days of alcoholic fermentation without temperature control; gentle treading twice a day; 1 month of “cuvaison”; malolactic fermentation in new French oak barrels
AGING – 100% maturing for 48 months in French oak
